Recipe: Homemade Mayonnaise

As recipes go, nothing is more essential than Mayonnaise.  Imagine if you will a nice club sandwich with out mayonnaise. I know sacrilege right?  And to further the issue – homemade mayonnaise is so easy to make.  With ingredients you have in your pantry, or refrigerator you can make this essential sauce.

As always this recipe is cost conscious – as you can have a gallon of this stuff at pennies a serving.  Save your money and keep a more flavorful mayonnaise in your refrigerator.

My favorite base Mayonnaise came from Bon Appétit – here it goes:

Ingredients:

  • 1 large egg yolk
  • 1 1/2 teaspoons fresh lemon juice
  • 1 teaspoon white wine vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon salt – plus more to taste
  • 3/4 cup canola oil, divided

Method:

  1. Combine your yolk, lemon juice, vinegar, mustard and 1/2 teaspoon salt in a medium bowl.
  2. Whisk this until blended and has a hue of a bright yellow.  This should take about 30 seconds.
  3. Using 1/4 teaspoon measure and whisking constantly, add 1/4 cup oil to the yolk mixture, a few drops at a time, about 4 minutes.  Gradually adding the remaining 1/2 cup oil in a very slow, thin stream.
  4. After about 8 minutes of whisking, you will see your mayonnaise will be lighter in color.  This will be thicker, this is your sign to stop.
  5. Cover and chill.
