Often times we will go to CostCo or Sam’s Club (the two megamart bulk food sources here) and purchase bulk chicken to sock away in our deep freeze. And like you, I have stared at that mass of frozen chicken block and wondered – “gosh, I just don’t want it to taste like… chicken!”
Well, if your a regular reader of MarinateMeBaby.com you find we like that juicy bird. What? You don’t think chicken can be juicy and luscious to the taster? Well, hold your tongue and start copying a few recipes down. First is the Margarita Grilled Chicken, and this one is great one. Either way, you are on your way to a new experience – GREAT TASTING CHIKCEN!
I would strongly encourage you to make this one a few times as to make it a basic marinade in your kitchen. It has a bright flavor and keeps the meat moist.
This works for both light and dark meat chicken, and is amazing over pork.
Ingredients:
- 1/3 cup water
- 1/3 cup vinegar
- 1/3 cup vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried Italian-style seasoning
- 1 teaspoon poultry seasoning
- 1 teaspoon dried rosemary, crushed
- 1 teaspoon salt
- zest of 1/2 lemon and 1/4 lime
- 1 teaspoon round black pepper
Directions:
In a non-reactive bowl, mix all of the ingredients together until well incorporated.
You can cover and this will last for 3 days. Best used when you serve over your choice of meat.
*Note this is not a great sauce marinade. So discard the remaining marinade after the cooking is done.
