So, on a recent trip to Whole Foods in Salt Lake City, I had happened to walk down the condiment isle and found that was a bottle of ‘Tequila Lime Cocktail Sauce’. Well, on to the Huevos Rancheros – I was sitting in a local diner/cafe here in Ogden and ordered this dish. I looked at my plate and found myself saying to myself, “this is simple enough” – “Why can’t I…” That is all it takes. I have made this traditional Mexican dish with some twice fried hash potatoes. If the empty plates are any indication, this might become a family classic.
