Italian pasta has a bigger resume than just spaghetti and fettuccine noodles. What? Yes, it is true. You can take my word for it. Now, one of my favorite is Cavatelli is a regional pasta and is popular in the Avellino province, which is in a subsection of Campania.

Now Cavatelli with Sausage is a classic, and every Italian mother from the region in Italy has a recipe for this. However, this is mine. Now, don’t confuse me with an Italian Mother… lol However, this has a little spice in it, but not overwhelming. Feel free to explore this new Italian dish! Let me know you liked it!

My inspiration came after going to a resturaunt for Tempenyaki. Now, this restaurant by any other name is Benihana’s. However, what makes this place different is they brew their own Teriyaki on site, and as such it has a different taste. My wife swears its more intense – and I would agree.

I find myself drifting at times between two influences to my center culinary. Generally, I find good basic food will always have a place on my dinner table – However, Italian and American South East or “Southern” or “the Dirty” tends to fit the bill more often than not.

Why? Well, your guess is as good as mine. My Parents both didn’t influence me to heavy based on any region, or nationality. Other than, when my Mom went back to work all of us children had to take a night to make dinner. So, at an early age I learned to value of putting things together from the pantry to make good, basic food. While my Mom was a eat to live type, I found a home cooking and became on of those live to eat types.
